AHS 231 - Food Service Management


Credits: 3 hours
The course will examine the foundations of Food Service as it applies to the role of the Certified Dietary Manager. Students will learn the basis of foodservice such as managing recipes, standards for preparation and distribution of food as well as how to manage personnel and communications, sanitation and safety, and basic business operations.
